Meal Planning- - Week 2

I love to meal plan on Sunday night, then order groceries online and swing by and pick them up after school drop off. It is my favorite. Maybe it’s because I don’t have to walk around the store with my toddler, or maybe it’s my stop for an iced coffee at dunkin, I don’t know... but this routine makes me happy. I know what’s for dinner every night. The fridge is full for making lunches and breakfast. I feel together and ready for the week.

This week is the start of extra curricular activities for us. My daughter starts dance. I also have several meetings at the school, for back to school orientation, so at least two nights I need quick meals. This weeks meals are very quick and easy with a couple being great make ahead options! This week is also filled with option.  Allowing my kids to choose their toppings, makes for happy kids and no fights!

Baked potato bar. This is perfect for a Monday. You can bake the potatoes in the microwave, crock pot or instant pot. For Crock pot, wash potatoes well, put olive oil, pierce skin and wrap in aluminum foil...cook on high for 3-4 hours...low 6-7.  For the instant pot, its important to use the steamer insert, place a cup of water in the bottom. Pierce the skin of the bakers, 5-6 medium potatoes manual 20 minutes.

It’s a great time to use up leftovers. Have leftover hamburger meat... chop it up and heat it with some Worcestershire sauce and put that on top, broccoli & cheese, chili, leftover grilled meat. Anything is food on top of potatoes! This is easy and a winner as everyone can make their own and make it how they want!

 
This marinated chicken is SO good. I have been making this for years. If you can remember to marinade if the night before you won’t be sorry! We love to grill the chicken along the other grilled pineapple. Have you ever had grilled pineapple? You’ll never want to eat it any other way! I also love to grill green beans and serve that along side. This chicken is great as a sandwich on a croissant! It’s also great on top of a simple salad.

Quiche is such a great and easy dinner option. My favorite part is you can make it hours ahead. Quiche is delicious hot or cold, but it is really great room temperature. I take the easy route and used pre-made crust. I always make two and save one for breakfast or gift is to a momma who needs a little extra love this week. I will serve mine with a simple mixed fruit salad and probably a cinnamon raisin biscuit.  I will make my quiche Parmesan & bacon, but the great this is you can put anything in it. Veggies, leftover steak, cheese ... anything!
I love to serve quiche with a simple and elegant salad.  My favorite is spring mix dressed lightly with lemon juice and olive oil.  Sprinkled with garlic powder, salt and pepper.  Topped generously with parmesan cheese.  SO GOOD.

Make your own pizza! This is one of my kids favorite nights. I like to take some help from our local Publix with the pizza dough. In the bakery section there is a small refrigerator with pre-made pizza dough in it. It’s an easy way to make pizza at home.

Pre-heat your oven, spread dough out as thin as desired on a pizza stone or pan...don't have that??? A cookie sheet will be just fine.  Season the dough with olive oil, garlic salt and parsley.  Next add your sauce, then start layering toppings and cheese.

The dough may have directions on it. I like to do high temp for a short time. 425 degrees until it is crispy and brown. Top your pizza before putting it in the oven, I like to grate a little extra Parmesan on top as soon as I take it out!

I like to have an array of toppings and my kids get a certain section they get to choose their flavors. Recently, I had s bunch of leftover bbq chicken, we made a bbq pizza. That same night we made a flat bread with steak and green olives. I prepped that crust with olive oil, garlic salt and dried parsley. I used an Italian blend cheese, sliced grilled steak and green olives. It was so yummy!

I always have mozzarella / Italian blend and Parmesan cheese. I use regular jarred marinara sauce. I also like to have various size pepperoni and crispy bacon. My kids are big olive eaters, so I have both black & green in hand.  I would love to do something more adventurous like artichoke hearts or grilled peppers... but those aren’t big winners with my kiddos. Valentines Snack Mix

This snack mix is so easy & versatile for any holiday or activity. This is a super kid pleaser. The variety I made is nut free, there is a peanut allergy in my daughters class.  I started with popcorn & pretzels as my base. I popped my popcorn on the stovetop, you could just as easily use pre-bagged popcorn (Smartpop) or microwave popcorn.  I used 8 cups of popcorn and 3 cups of pretzels. Mix in a large bowl. Next, melt your vanilla coating chocolate. Follow the melting instructions on the package.  I dyed mine pink for the occasion.  Once the coating candy is melted and the right color, pour it over your mix. Stir constantly until is all incorporated. Spread out on parchment or wax paper. I used valentines sprinkles next... this is optional... but too cute to pass up! Tween Room Inspiration

Our oldest just turned 10, I just can’t believe it. But ten is big and she is beginning to grow out of toys and little girl stuff. She currently shares a room with her 7 year old little sister. They sleep in sweet little twin beds and we hear them whispers and playing after bed time. It has been good for them to share a room. I think it’s a wonderful learning experience for children to share a room. I have much older half siblings, so I basically grew up as an only child. Learning to live in a shared space is such an important lesson. Respecting people areas, cleaning up after yourself... these are all great lessons. Things that will serve her well in college. This particular child is fiercely independent and thrives and recharges on solo time. As the baby of the family approaches needing to be out of the crib we know a change is on the horizon. Our house has enough bedrooms  for everyone to have their own room, but some are upstairs  near our Master bedroom and some downs...
