Instant Pot French Dip Sandwiches

Instant Pot French Dip Ingredients: 1 beef roast (size dependent on your crowd) 2-2 1/2 cups red wine 2- 2 1/2 cups beef broth 1/2 sweet onion coarsely chopped Worcestershire Sauce Butter Garlic paste Salt & Pepper Parsley First, you want to sear the outside of your roast. Mine was big so I had to cut it into two portions and sear it in stages. Get out all your ingredients, set your IP on sauté Hot. While it warms up, trim up your roast. I prefer to get extra fat off the roast. Put a couple of table spoons of butter in the IP. Salt and pepper your roast and put it in. The goal is just to get it browned on all sides. Once browned, take it out and set on a plate (you want to collect juices). Add a little more butter and sauté onions. After 3-4 minutes, turn your IP off. Put roast back in. Sprinkle in a tablespoon of parsley and 2 cloves of crushed garlic. Pour red wine  (I used a wine we had opened for a get together and didn't finish) and beef broth

NY weekend getaway

Mother’s Day weekend we had the opportunity to sneak away. My husband had some work in NY and we decided to take the weekend before his meetings and play tourist. This was the first time we’ve gotten away since the youngest was born... she’s two and a half. So, needless to say it was over due. We really only had a day and a half. The day we got there was the only day we had good weather. So we dropped our luggage and started walking! We walked almost 11 miles. We walked all over Central Park and saw lots of buildings and recognizable  sites. We saw the Chrysler building, Rockefeller Center, Radio City music hall, St. Patrick’s Cathedral and my personal favorite Grand Central Station. Side note.... I wore my favorite everyday athleisure shoes by Dr. Scholls. I blogged about them here. 11+ miles and I felt great. Mother's Day Gift Guide

Mother’s Day is almost here. If you are like me, when my hubs and kids ask if there’s anything I want... I can never think of anything. So I’ve compiled an inspiration list. Most mommas can find one thing on the list that they love and could really use! Let me preface this list by saying this. My favorite gifts for me are pampering ‘me-time’ things. A pedicure or facial.... a blow-out or girls night. These are things I don’t always have time for or childcare. So, to me they are a two fold gift...time & activity.
