Breakfast Bowl

I've done several bowl recipes.  I am partial to them. Portion control, easy eating and delicious.  As I have been all about back to school prep lately... this recipe seemed like a no brainer..

Ingredients:
1 bag frozen sweet potato tots
Eggs
4-5 slices of bacon
1/3-1/2 roll of breakfast sausage
4-5 mini sweet peppers chopped
Salt & Pepper to taste
Smoked paprika
Garlic paste
Grated cheese (I used a smoky spicy variety)


I picked up some sweet potato tots at my local  market. I used the sweet potato tots as the base layer of my bowl. I cooked them as instructed on the bag. Mine called for 425 degrees for 20-25 minutes. I love the balance of sweet they add to this bowl.  You could easy do fresh oven roasted sweet potatoes...but for me the time saver is a huge draw.

While those were in the oven,  I cooked some chopped up bacon in a skillet. While that browned I chopped up some sweet peppers. I also used some breakfast sausage that I browned a few days ago. I used it in another recipe and didn’t use it all. For this recipe I used about 1/3 of a roll.

Once the bacon is crispy, remove onto a paper towel to drain, I poured off most of the grease out of the pan (into a container). Cook the peppers in the remaining bacon grease. As it starts to brown, add 1/2 tsp of garlic paste, salt, pepper & smoked paprika. I added the pre browned sausage to the peppers, just to re-warm it.  Once everything is cooked through, slide it onto a plate. Carefully wipe out the skillet w/ a dry paper towel so you can use the same skillet for your over medium egg.




Crack you egg in the skillet let cook for a minute until it starts to come together flip once. You don’t want to over cook, the egg yolk becomes a delicious sauce for your bowl! For my kids I will probably just to scrambled eggs. But the over medium egg in this recipe is divine!

Eggs only take a short time to cook, so after you crack your eggs in the pan, start to assemble the bowls. Sweet potato tots, sausage & peppers, a few pieces of crispy bacon then add your eggs then top with grated cheese!



This meal is perfect for BFD - Breakfast for Dinner - It is filling, high protein and best of all easy.  It is a crowd pleaser with sweet, salty and savory!

Tween Room Inspiration

Our oldest just turned 10, I just can’t believe it. But ten is big and she is beginning to grow out of toys and little girl stuff. She currently shares a room with her 7 year old little sister. They sleep in sweet little twin beds and we hear them whispers and playing after bed time. It has been good for them to share a room. I think it’s a wonderful learning experience for children to share a room. I have much older half siblings, so I basically grew up as an only child. Learning to live in a shared space is such an important lesson. Respecting people areas, cleaning up after yourself... these are all great lessons. Things that will serve her well in college. This particular child is fiercely independent and thrives and recharges on solo time. As the baby of the family approaches needing to be out of the crib we know a change is on the horizon. Our house has enough bedrooms  for everyone to have their own room, but some are upstairs  near our Master bedroom and some downs...

Italian Cheese Ball

I blogged and did a IG live recently and made a cheeseball. You can see the blog post here. Cheeseballs are a fantastic item to serve at a gathering. They are easy, appetizing and unpretentious. You can make them any flavor to fit what you are looking for. This last weekend we were swimming at a friends house and I wanted to bring something for us to snack on. I made a Italian flavored cheeseball. Think of the flavors of an Italian sub, but in a cheeseball! So good. I like to mix my cheeseballs in an electro mixer... but that’s not necessary. It just needs to be well mixed. Ingredients: 2 finely chopped peperocinos 2 finely chopped cherry peppers 1 block of softened cream cheese 1/2 packet of Italian dressing (dry) 1/4 cup Parmesan Coating: 1-2 tablespoons of dried parsley 2-3 pieces of hard salami, chopped finely (blotted w/a paper towel to remove extra oil) 1/4 cup Parmesan Wrap in plastic wrap and refrigerate at least one hour before serving.
