Cheeseburger Bowls

New Recipe!

Trying to get back on track with eating. I’ve been like a 12 year old in the gas station market since school has been out!

I’m attempting to be more carb conscious again. So I thought I’d work up a new summer recipe. What says summer more than burgers?!? You can certainly go the more traditional route and just 86 the bun or wrap it in lettuce. I wanted something even easier and more time friendly. I notice in summer it becomes a buffet at dinner... eating between sports, activities etc. So being able to make a plate as you need is ideal.




Ingredients:

Ground beef (I used a pound...easy to adjust for more or less)
Season beef with: garlic salt, pepper, onion powder and a couple of splashes of Worcestershire sauce

Chopped Iceberg Lettuce
Chopped Pickles
Chopped Tomatoes
Shredded Cheese
(Chopped Onions would also be great... but my crew isn’t a big fan)
Sesame Seeds

*Really any toppings you love on top of a burger would be absolutely great! That is why the basic of this recipe is so good...its very versatile*

Burger Sauce

(make in a mason jar for easy storage)
1/4 cup mayo
1/3-1/2 cup ketchup
a couple of shakes of Worcestershire sauce
salt and pepper to taste
1-2 tsp (a good squeeze) of dijon mustard
1/4 tsp of paprika
1 clove crushed garlic


While browning the hamburger, leave meat in bigger chunks so that it is easier to eat with a fork.  Once the hamburger is done, time to start assembling the bowls.

Chopped lettuce on the bottom, then beef and cheese.  Now time to add your topping.  Finally, drizzle the burger sauce over the top with a fork and sprinkle sesame seeds.

My kids went back for second helpings.  I am going to keep that burger sauce ready in the fridge all summer.  Would be great on regular burgers as well, but would also be terrific as any kind of dip for chicken, potatoes or hotdogs.

Valentines Snack Mix

This snack mix is so easy & versatile for any holiday or activity. This is a super kid pleaser. The variety I made is nut free, there is a peanut allergy in my daughters class.  I started with popcorn & pretzels as my base. I popped my popcorn on the stovetop, you could just as easily use pre-bagged popcorn (Smartpop) or microwave popcorn.  I used 8 cups of popcorn and 3 cups of pretzels. Mix in a large bowl. Next, melt your vanilla coating chocolate. Follow the melting instructions on the package.  I dyed mine pink for the occasion.  Once the coating candy is melted and the right color, pour it over your mix. Tween Room Inspiration

Our oldest just turned 10, I just can’t believe it. But ten is big and she is beginning to grow out of toys and little girl stuff. She currently shares a room with her 7 year old little sister. They sleep in sweet little twin beds and we hear them whispers and playing after bed time. It has been good for them to share a room. I think it’s a wonderful learning experience for children to share a room. I have much older half siblings, so I basically grew up as an only child. Learning to live in a shared space is such an important lesson. Respecting people areas, cleaning up after yourself... these are all great lessons. Things that will serve her well in college. This particular child is fiercely independent and thrives and recharges on solo time. As the baby of the family approaches needing to be out of the crib we know a change is on the horizon. Our house has enough bedrooms  for everyone to have their own room, but some are upstairs  near our Master bedroom and some downs...
