Low Carb Lunch
So, back right after Thanksgiving I went low carb. So, of course I spent a lot of time exploring new & flavorful recipes on Pinterest. One of the things I tend to do is gain inspiration from other people’s blogs and recipes and make them my own. I love that about cooking, seeing something that sparks your interest and adapting it to fit your families tastes.
One thing that is a trend in low carb recipes is bowls. Taking a favorite sandwich or meal and taking the bread or carb out of it by placing it in a bowl. I saw Philly cheesesteak bowls, burrito bowl, taco bowl etc etc etc. You get the idea you can turn just about any delicious sandwich into bowl form. One recipe that I found that really sounded great to me was an eggroll bowl. I love Asian food, but had kind of avoided it because of the all the rice and noodles....not to mention the fried options. I read the recipe and decided what worked for me and what didn’t and gave it a whirl. It was great! I made it for the second time today and I think I liked it even better. My best friend Lauren came over and the baby girls played....we visited and I made lunch. It is simple and quick and so good. This meal is chocked full of veggies and lean protein in the form of ground turkey.
Recipe
1 lbs of Ground Turkey
2-3 Tbsp of Sesame Oil
2-3 Tbsp of Olive Oil
2 Cloves of garlic - - I use paste from the tube
1 bag of coleslaw mix
1/4 of Soy Sauce to taste
Sprinkle of pepper
Sprinkle of red pepper flakes
1/2 -1 Cup of diced vegetables
-I like this meal to be vegetable heavy. I basically look in my fridge to see what needs to be used up. Today I had carrots, broccoli, sweet mini pepper and snap peas. I cut up a few of each and through them in.
Rice vinegar
Brown the meat in 1 tbsp of each sesame oil and olive oil. Turkey has a tendency to be dry so be generous with the oil. Season with pepper and a tbsp of soy sauce. Once it is cooked through remove to a plate and use the same pan to start the veggies. Use the remained of the oil add garlic. Once the garlic is fragrant, add in the whole bag of coleslaw mix. Stir. Start adding the other veggies and the remainder of the seasonings and Soy Sauce. After a couple of minutes add the cooked meat back in. I like a little crunch left in my veggies so I only cooked them for a few minutes. Taste as you go. Finish with a splash of rice vinegar.
Lauren says she wants me to make this for her birthday! I hope you like it as much as she did!
